Badusha Recipe
1.all purpose flour-3 cup
Salt-1/2 tsp
Mix together
2.Butter-100 gm
Oil-3 tbsps
Melt the butter.Add the oil.
3.Baking soda-1 tsp
Sugar-4 tsp
Yoghurt-4 tbsp
Add to the butter mixture
4.water-1/2 cup
Add the flour to the above mixture and add water and make a smooth dough.Let this rest for 10 minutes.
Meanwhile make the sugar syrup
5. Sugar-1 1/2 cup
Water-1-4 cup
Boil this together.When this reaches one string consistency add juice of a lemon and 4 cardamoms crushed to this & off stove.
While sugar is boiling you can make lemon size balls with the dough and heat a kadai with enough oil to deep fry the balls.
Once the oil is heated,take the ball in your palms ,lightly flatten it & press the center to form a light depression.
We don't want the badushas to get browned soon in hot oil at once.So when the oil heats up,We add 3-4 discs into the hot oil and remove it from fire(I usually keep it over the next burner,which is off ) & let it cook in the heated oil.Once the heat substantiate,place the kadai over the fire & cook the other side on medium heat.We do this to get the discs / badushas evenly cooked inside .Once it's browned on both sides remove it and dip in the sugar syrup and let it remain in it till another batch is fried & ready to be dipped in. Once it's coated with sugar syrup,remove and place on parchment paper or plates.After 2 hours you can see a white coating over your badushas.
I don't like this white coating of sugar on my badushas .So what I usually does is to Off the sugar syrup just before it attains one string consistency and add the lemon juice and cardamom powder.For this you might need some practice .
