Anzac Biscuits

Anzac Biscuits/Golden Oatmeal Cookies 🍪

The Anzac biscuit is a sweet biscuit, popular in Australia and New Zealand, made using rolled oats, flour, sugar, butter (or margarine), golden syrup, baking soda, boiling water, and (optionally) desiccated coconut.

Anzac Biscuits/Golden Oatmeal Cookies 🍪 ( yields 31 cookies)

1.All purpose flour-150 gm(1 cup)

Rolled Oats-90 gm(1 cup)

Light Brown Sugar -100 gm(1/2 cup)

White Sugar-100 gm(1/2 cup)

Desiccated Coconut-80 gm(1 cup+2 tbsps)

Salt-1/4 tsp

In a bowl mix together all the above dry ingredients together.

2.Unsalted Butter-150 gm

Golden Syrup-2 tbsps

Baking soda-1 tsp

In a small pan heat the butter and golden syrup until butter is melted and just starting to boil.Remove and add the baking soda and stir in.Pour this into the set aside dry ingredients and mix in.If your mixture doesn’t come together add an extra tablespoon of golden syrup or boiling water and mix in.

Make medium balls and just place it onto a baking tray lined with parchment paper and just press it to spread to make a rough circle.

Repeat with the remaining dough leaving 1/2”space between the cookies.

Bake this cookies in a preheated oven at 170 C for 9-10 minutes.The cookies are done when nice aroma of biscuits emanates or it’s lightly browned.Allow the cookies to cool a bit on the tray before transferring it to containers.Anzac Biscuits are ready.
