Angamaly Manga Curry (Angamaly’s famous raw mango curry )
1.Raw Mango-1 big
Chilli powder-1/2 tsp
Turmeric powder-1/4 tsp
Salt-1/4 tsp
Mix together all the above ingredients in a bowl and set aside for 10 minutes.
2.Sliced Shallots - 12 to 15
Green Chillies- 2-4
Finely Chopped Ginger - 1/2 tsp
Curry Leaves - 4 to 5
Coconut Oil - 1/2 tbsp
Salt-1/4 tsp
In a pan/kadai add all the above ingredients and mix it with your fingers,lightly crushing them a bit.
3.Chilli powder-1/4 tsp
Coriander powder-1/2 tsp
Turmeric powder-1/4 tsp
Coconut milk-2 tbsps +1/3 cup
Water-2/3 cup
Add in the marinated mango pieces and the above masalas and mix well.
Now add the coconut milk & water
Cover with a lid and cook on medium heat for 10 minutes till the mango pieces are just cooked and translucent.Now add the remaining 1/3 cup coconut milk and mix well.Once it starts to boil slightly,remove from the stove .
4.Coconut oil-1/2 tbsp
Mustard seeds-1/2 tsp
Shallot-3
Dry Red Chillies-2
Curry leaves-1 sprig
Heat a small pan with oil and splutter the mustard seeds.Add in broken dry chillies and sliced shallots and sauté.When the shallots are golden,add in the curry leaves and off the stove.Pour this tempering over the Manga curry and stir in. Angamaly Manga Curry is ready.
