Wheat Paalappam/Vellayappams

1.Wheat flour/Atta-2 cups

Rice flour-1 cup

Salt to taste

Yeast-1/2 tsp

Sugar-4 tbsps

Lukewarm water as reqd.

In a vessel mix all the dry ingredients and add enough lukewarm water to make a thick batter.

2.Egg-1

Coconut milk powder-5 tbsps dissolved in 1/2 cup water

Or

Fresh coconut milk-1 cup (adjust the lukewarm water accordingly).

Add the egg and coconut milk and adjust salt and mix to get a dosa batter consistency.

Set this aside to rise for 6-8 hours. My batter was ready in 4 hours as it's very hot here.

You can make Paalappams or kallappams with this batter as shown in pictures.
