Ghee Cake

Ghee Cake

1.All purpose flour/Maida-1 cup(140 gm)

Baking powder- 1/2 tsp

Baking soda-a big pinch

Salt-1/4 tsp

Sieve together all the above ingredients thrice and set aside.

2.Ghee-1/2 cup (should be in semi solid form)(100 gm)

Milk-1/2 cup

Heat together the milk & ghee together till ghee is melted through.

3.Eggs-2

Granulated Sugar -3/4 cup(150 gm)

(U can reduce the sugar by 2 tbsps if you don’t want it that sweet)

In a pan boil 1 cup water.Place the sugar and eggs in a steel bowl and place it over the hot water and beat it till pale and fluffy.

3.Lemon juice-2 tsp(If you are using Indian lime juice add only 1 tsp)

Add the lime juice and beat well.

Now add the set aside flour mixture in 3 batches and the milk ghee mixture in 2 batches starting and ending with flour and beating in low speed until just mixed.

Pour this into a baking pan/loaf pan lined with parchment paper.Tap the pan 2-3 times to release any air bubbles.

Bake this in a preheated oven at 180 C for 27-40 minutes or until a skewer inserted at the center comes out clean.Mine was ready in 29 minutes .This will vary if you are using a loaf pan as it will take more time to bake.

Note:I added some split cashews to the top and baked.
