Whole Wheat and Jaggery Coffee Cake with Prunes & walnuts
1.Espresso Coffee powder-3 tsp
Boiling water-1/2 cup
Jaggery grated-1 cup
Mix together the above ingredients until the jaggery is melted.Keep aside to cool.
2.Whole wheat flour/atta-2 1/2 cup
Baking powder-2 tsp
Baking soda-1 tsp
Salt a pinch
Cinnamon powder-1 tsp
Sieve together and keep aside
3.Eggs-3
Vanilla essence-1 tsp
Oil-3/4 cup (I used canola oil)
Add to the cooled coffee-jaggery mixture and beat with a beater.
4. Curd-3/4 cup
Water-1/4 cup
Beat with a fork and set aside.
Add the set aside flour mixture in 3 parts to the beaten eggs and oil mixture along with the curds in two parts.
5.Prunes-1 cup ( chopped)
Walnuts and Badam-1/2 cup (chopped)
Lemon rind-1 tsp
With the last part of flour add the lemon rind,chopped prunes & nuts.
6.Vinegar-1 tbsp
Add the vinegar and fold in.
Pour into prepared loaf tin or cake tins & top with sliced almonds .Bake in a preheated oven at 180 C until a skewer inserted at the center comes out clean
I baked in a silicon bundt mould and muffin tray.Mine took around 45 minutes to bake.
