Vegetable Piralan

1.Onion-1 big

Ginger-1 small piece

Garlic-4

Green Chillies-5-6

Curry leaves-1 sprig

Chop all the above ingredients separately.

Heat 2 tbsps oil. Add the curry leaves & then the chopped garlic and ginger.Saute for a minute. Add the chopped onions and the green Chillies and saute till it starts to brown.

2.Turmeric powder-1/2 tsp

Chilli powder-1/4 tsp

Corriander powder-2 tsps

Add the above masalas & saute in low heat.

3.Tomato-1

Add 1/2 cup water and the chopped tomatoes and cook till oil separates.

4.Potato-1

Carrot-1

Salt to taste

Cut the carrot and potato into small pieces. Add to the above along with 1 cup water and salt to taste.Cover & cook till they are cooked through.Now add the

Green peas-1/4 cup

Cauliflower florets-3/4 cup

and cook until cauliflower is cooked.

5.Coconut milk-1 cup

Garamasala-1/2 tsp

Vinegar-1 tbsp

Corriander leaves-few

Add the coconut milk,garamasala and the vinegar.Adjust salt.If you feel the curry is not spicy,add 2 green Chillies chopped at this stage and allow the curry to simmer for a minute or two. The vegetable Piralan is ready to serve with Appams or Chappathis.
