Vanilla Pudding Parfaits with Chocolate & Caramel Sauce
(Serves 20 people)
For the Vanilla Custard
1.Milk-600 ml
Condensed milk-1 tin(397 gm)
Sugar-1/2 cup
Custard Powder-2 tbsps
Cornflour-2 tbsps
Mix the custard and corn flour in 1/2 cup milk (from the 600 ml mentioned)till smooth.In a vessel add all the above ingredients and bring to boil stirring continuously so that it doesn’t burn.Once boiled and thickened remove and set aside to cool.Can place in fridge to cool easily.
Note:U can use 4 tbsps of custard powder alone or corn flour alone also to make the custard.
For an egg version use 2 large eggs and 1 tbsp of custard powder instead.
2.Vanilla essence-2 tsp
Add to the slightly cooled custard and stir in.
3.Whipping Cream-1 cup
Sugar powder-1/4 cup
I used Almarai whipping cream.Pour the whipping cream into a steel bowl and place it along with the beater blades in freezer for 15-20 minutes.
If your whipping cream is sweet,no need to add the sugar mentioned above.Beat this cooled whipping cream along with sugar powder till thick.Whisk the cooled custard with the beaters for few seconds to loosen a bit.Now add the whipped cream to this and gently fold in.The Vanilla Custard is ready.
For the Caramel Sauce
4.Sugar-1 cup
Water-1/2 cup
In a saucepan heat sugar and water together without stirring.You can tilt the pan to mix but do not stir with a spoon.Once the mixture starts to change it’s color,reduce the heat to medium and cook till it’s golden brown..
5.Butter-100 gm
Fresh Cream (Whippingcream)-1 cup
Vanilla essence-1 tsp
Salt-a pinch
Once the mixture is golden,add the butter cubes and mix.Once butter is mixed well add the cream and cook till the mixture is almost boiled through.Remove and set aside to cool.Add the vanilla and a pinch of salt and stir in.Once cooled the mixture thickens.Homemade Caramel Sauce is ready.Set aside to cool.
Note:Use fresh Cream as it will give you a thicker Caramel Sauce.
For the Chocolate Sauce
6.Milk Chocolate-150 gm
Fresh Cream (Whipping Cream)-1 cup
Heat cream to roll boil and add to the grated/chopped Chocolate and let it sit for a minute.Then stir till well mixed.Chocolate Sauce is ready.
Note:Use Fresh Cream as it gives you a thick sauce.I used 200 ml whipping cream and 100 ml fresh cream as only these were available and added 180 gm Galaxy Chocolate chopped to make it thick.Set aside to cool.
For Assembling the Pudding
7.Parle G-70-72 pieces
U can use any sweet biscuits of your choice.My pudding tray required 23 pieces for the first layer and 24 pieces in the next two layers.
Place some vanilla custard to your pudding bowl and spread a thin layer as the first layer.Top with the biscuits to form the second layer.Now place some of the vanilla custard and spread another thin layer evenly to form the third layer.
Now pour 3/4 th of Caramel Sauce over this and spread it evenly with the back of a spoon to form the fourth layer.Top again with biscuits to form the fifth layer making sure to fill all the gaps with broken biscuit pieces.Now top with another thin layer of the vanilla custard to make the sixth layer.
Now pour 3/4 th of the Chocolate Sauce and spread it evenly with the back of a spoon to make the seventh layer.Top with another layer of biscuits to form the eighth layer.Now place all the remaining vanilla custard over this and spread evenly to make the ninth and final layer.
To decorate the pudding,pipe or spoon 3 straight lines of Chocolate Sauce from the sides of the dish,leaving 2” gaps in between.Pipe/spoon the Caramel Sauce too in 3-4 straight lines as shown in picture below.Now take a skewer and draw straight lines from the other side to make a design one inch apart.Repeat from the top to bottom from the other side too as seen in the video.Refrigerate for 7-8 hours or overnight to set.
Vanilla Pudding Parfaits with Chocolate & Caramel Sauce is ready.This can be served for 20 people easily.
