Szechuan Chicken
For Marination
1.Boneless Chicken-300 gm
Chilli powder-1/2 tsp
Pepper powder-1/2 tsp
Soya sauce-1 tbsp
Salt to taste
Marinate the chicken strips in the above ingredients for at least 30 minutes.
For coating & frying
2.Egg-1/2
Corn flour-2 tbsps
All purpose flour-2 tbsps
Oil for frying
Meanwhile heat some oil in a kadai/pan.
Add half of a beaten egg into the marinated chicken and stir in.Add the corn flour & all purpose flour a tbsp at a time and stir in.Continue adding the flour till the chicken is well coated .Deep Fry the chicken strips in hot oil in 2-3 batches,till browned and crispy.Remove and drain on tissues.
For the gravy
3.Garlic-1 tbsp
Ginger-2 tsp
Chilli powder-1/2 tsp
White Pepper powder-3/4 tsp
Oil-2 tbsps
Heat oil and sauté the chopped ginger & garlic and then add the chilli & pepper powders on low heat and sauté.
4.Chilli Garlic Sauce-1 tbsp
Tomato Ketchup-2 tbsps
Soya Sauce-1 tbsp
White Vinegar-1 tbsp
Chicken cube-1
Or Chicken stock-1 cup
Add all the above ingredients and 1 cup water if you are using chicken cubes .Let it simmer for few minutes.
5. Onion-1 big
Capsicum-1
Corn flour-1 tsp
Sugar-1/2 tsp
Cut the onions and capsicum into chunks and add to the above and stir in.Now add the corn flour dissolved in 2 tbsps of water and cook till the gravy thickens.Add the sugar and adjust the seasonings.
Now add the fried chicken pieces and stir in till well coated with the gravy.Off the stove and sprinkle some chopped spring onion greens on top.Szechuan Chicken is ready.
