Soya Veggie Cutlets
1.Carrot-1 big (grated )
Cauliflower-1 cup (chopped)
Cabbage-1 cup ( chopped)
U can use any other veggies you like.
The veggies should altogether be 3 cups.
2.Onion-1 big
Ginger-1 piece
Garlic-3 big( Chinese ones)
Green chilies-6-7
Curry leaves-2 sprigs
Oil-1 1/2 tbsp
Chop all the above ingredients and sauté in oil.
3.Pepper powder-3/4-1 tsp (adjust according to your spice level)
Salt to taste
Add the pepper powder and sauté.Now Add the chopped/grated veggies and salt & cover and cook on low flame until done.Set this aside.
4.Soya granules-1/4 cup
Boil some water and add the Soya granules to it.Once boiled through off the stove and leave it covered for 10 minutes. Then drain.Add some normal water ,wash and squeeze it to remove any water in it.Set this aside.
5.Oil-1 tsp
Chilli powder-a pinch
Salt to taste
Boiled potato-1 big(125 gm)
Heat a tsp of oil and add a pinch of Chilli powder on low heat.Add the set aside cooked Soya granules and sauté for a few minutes.Off the stove and mix in the set aside cooked veggies.Allow this to cool.
Meanwhile mash the boiled potato and add it to the cooled veggie mixture and mix it to a big ball.Take a small portion and make it into small ball and shape it into round/oval shapes.Repeat till all the mixture is used up.
6.Egg-1
Water-1 tbsp
Bread crumbs-as required
Beat the egg & water together in a bowl with a fork.Dip each Shaped Cutlet first in the egg mixture and then coat them with the bread crumbs.
Heat enough oil in a kadai and deep fry the Cutlets in hot oil till browned.Soya Veggie Cutlets are ready to Serve with tomato ketchup.
