Shahi Paneer
1.Onion-1
Ginger-1" piece
Garlic-4
Cashews-10
Almonds-4
Roughly chop the onion,garlic and ginger.In a pan boil all the above ingredients together with 1 1/2 cups of water for 8-10 minutes.Set aside to cool.
2.Green cardamom-3
Black cardamom-1
Cloves-3-4
Cinnamon-1 piece
Bay leaf-1
Shah jeera/caraway seeds-1/2 tsp
Heat 1 tbsp ghee/oil and add all the above ingredients and fry till they release aroma.
Now strain the cooled onion and cashew mixture and reserve the stock.
Grind this along with the whole masalas to a paste by adding 2tbsps of reserved stock.
Add 2 tbsps oil into a nonstick pan and heat it. Add the ground paste to it and cook till oil separates.
3.Chilli powder-1/2-3/4 tsp
Turmeric powder-a pinch
Corriander powder-1 heap spoon
Tomato paste -3 tbsps
Salt to taste
Sugar-1/2 tsp
Add the Chilli,turmeric & Corriander powders and saute.Add the stock,tomato paste,salt and sugar.Simmer this on low flame until the gravy thickens around 8-10 minutes.
4.Paneer cubes-200 gm
Cardamom powder-1/4 tsp
Garamasala-1/4 tsp
Cream-3 -4 tbsps
Now add the masalas & cook. Add the paneer & the cream and simmer for 2 minutes till the paneer is cooked.Adjust salt.Garnish with chopped Corriander leaves & some cream. The Shahi Paneer is ready to serve with hot naans or parathas
