Schezhuan Egg Fried Rice
1.Basmati Rice-1 1/2 cups
Soak the rice in water for 15 minutes & drain.Cook the rice in salted water & drain.set aside.
2.onions-2 big( chopped)
Oil- 2 tbsp
ginger garlic (crushed)-2-3 tbsps
Green chillies-4 chopped
Heat oil in a pan and saute the crushed ginger& garlic .Add in the chopped onions & green chillies
3.Mushrooms-150 gm.
Carrot -1(chopped)
Capsicum -1(chopped)
Cabbage-1cup(chopped)
Beans-1 cup(chopped)
Corn/peas-1/2 cup
Salt to taste
Add to the above & sauté or steam seperately & add to the above.
4.Eggs-5-6
Make a well in the center and add the eggs and scramble it.
5.Chilly flakes-1 tbsp
Schezhuan sauce-4 tbsps.
Soya sauce-1 tbsp
Pepper powder-2 tsp
Add to the above & cook for a minute .Add the pepper powder too .now add the cooked rice & adjust seasonings.garnish with chopped spring onion leaves & serve.
