Red velvet cheesecake brownies

For the Brownies

1.Unsalted butter-113 gm

Granulated sugar-1 cup

Eggs-2

Vanilla essence-1 tsp

The butter and eggs should be at room temperature.Cream together butter and sugar till pale.Add eggs one by one & beat. Add the vanilla essence.

2.All purpose flour-3/4 cup

Cocoa powder-3 tbsps

Salt-1/4 tsp

Mix together and fold into the creamed mixture.

3.White Vinegar-1 tsp

Red food color as required

Add the color & the vinegar.

Line an 8" square pan with parchment paper .Reserve 1/4 of the batter & pour the remaining into the pan.

Meanwhile preheat the oven at 180 C.

For the Cream cheese filling

4.Cream cheese-8 oz.

Sugar-3 1/2 tbsps

Egg-1

Vanilla essence-1 tsp

The cream cheese and egg should be at room temperature.

Beat together the cream cheese and sugar. Add in the egg & vanilla and beat till there are no lumps.Spread the cream cheese filling over the brownie layer evenly.Drop spoonfuls of the reserved brownie batter on top of the cream cheese.With a skewer or Knife make swirls .

Bake for 25-30 minutes or until a skewer inserted in the middle comes out with some crumbs on it. Once cooled cut into 16 pieces.I bet you can't stop with one piece of the brownies.
