Rajma Masala/ Curry
1.Rajma/Kidney Beans-3/4 cup
Soak the kidney bean’s overnight and discard the soaked water.Pressure cook this with 2 cups water for 2 whistles.(around 15 minutes).Beans should be soft when done.
2.Oil-2 tbsps
Bay leaf-1
Cardamom-2
Cinnamon-1/2” stick
Cumin seeds-3/4 tsp
Heat oil and sauté the whole Masalas till aroma comes.Splutter the cumin seeds.
3.Onions-2
Ginger garlic paste-1 tbsp
Green Chillies-3-4
Tomato-2 medium
Salt to taste
Add the chopped onions and sauté till it starts to brown.Add in the ginger garlic paste and chopped green chillies and cook till raw smell vanishes.Add in the chopped tomatoes,salt and cook on medium heat till it’s mushy.
4.Turmeric powder-1/2 tsp
Chilli powder-1 tsp
Kashmiri chilli powder-1/2 tsp
Coriander powder-1 tsp(heaped)
Garam masala-1/2 tsp
Add in all the above masalas and sauté for a minute or two.Add in 1/4 cup water and cook till oil separates.Now add the cooked beans along with the water to this.I just smashed some of the cooked beans while adding to make the gravy thicker and creamy.Add in some more water if it’s too thick and let it simmer for 5-10 minutes.
5.Kasoori methi-1 tsp
Coriander leaves-1/4 cup
Add in the kasoori methi and coriander leaves chopped and stir in.Rajma Masala is ready to serve with Chappathi/Rice.
