Quinoa Dosas

Quinoa  (pronounced Keen-Wah)is a highly nutritious grain, which is also gluten-free, rich in fibers and high in protein. Only a few plant based grains provide all nine essential amino acids, and quinoa is one of those few plant foods that contain a good amount of all nine essential amino acids. A serving of quinoa also provides fiber, magnesium,calcium,manganese , B and B+ vitamins, vitamin E, minerals and beneficial antioxidants.

It is a slowly digestible carbohydrate,making it a good low-GI option too. If you have tasted Quinoa,you definitely know that it’s slightly bitter. It’s due to the natural coating on it called the Saponin.Hence quinoa has to be washed several times to remove this.

Quinoa Dosa (instant,yields 7 -8 dosas)

1.Quinoa-1 cup

Wash the quinoa 3-4 times or until the water is clear.Soak this in water for half an hour.Drain the water after 30 minutes.

2.Cucumber-1 big

Coriander leaves-4-5 sprigs

Green Chillies-4-5

Salt to taste

Cut the cucumber into small pieces without peeling the green cover.Cut the coriander leaves (with stems).Put all the above ingredients and soaked quinoa into a mixie/blender adding 1/4 cup water.Blend this to a smooth batter.

3.Rice powder-2 tbsps (used Appam podi)

Transfer this batter to a bowl and add the rice powder and stir in without lumps.Add extra water (around 1/2 cup) to make the consistency of dosa batter. If your cucumber is big you won’t require extra water .

Heat a dosa pan and make dosas by pouring 2 ladles of batter on the tava and spreading it evenly .Drizzle some oil and cook on medium heat till browned on one side.Flip and cook the other side too.Instant Quinoa Dosas are ready.Serve it with Sambar and Chutney.

For Egg Dosas

Today I made Quinoa Egg Dosas too by adding an egg beaten with salt and pepper and adding half of this mixture over a dosa.Add some chopped shallots if you like.Once browned flip and cook the other side too.

Note:U can peel the skin of the cucumber if you want.Then the dosas will be light green in color.

Also u can use watermelon white parts too instead of cucumber.
