Prawns Biryani š¦ š¤
Prawns Biryani (Serves 5-6 people)
For the marination
1.Prawns-1/2 kg
Turmeric powder-1/4tsp
Chilli powder-3/4tsp
Pepper powder-1/4 tsp
Salt to taste
Juice of 1/2 a lime
Marinate the prawns with the above ingredients for atleast an hour.
For the Rice
2.Basmati rice-2 cup
Soak the rice for 15 -30 minutes & drain.
3.Cardamoms -4-5
Cinnamon-1" piece
Cloves-5-6
Star Anise-2
Pepper corns-5-7
Bay leaves-2
Fennel seeds-1 tsp
Cumin jeera-1/4 tsp
Ajwain-1/2 tsp
Oil/ghee-1 tbsp
Heat oil and add all the above spices except jeeras.when the pepper corns starts to splutter add the jeera,fennel and ajwain,& allow to splutter.then add the drained rice and fry for 2 minutes.In a pressure cooker add the fried rice,salt to taste and 3 cups of water and cook for a whistle.
For the gravy
3.Onions-4-5
Tomatoes-2 small
Ginger garlic paste-1 tbsp
Green chillies-4-5
Corriander leaves-1/4 cup
Mint leaves-1/4 cup
Ghee/Oil-3-4 tbsps
Slice the onions and fry half of this till brown & set aside .fry some cashews and kismis till golden and set aside to decorate.
add the remaining onions & saute.when it starts to brown lightly add the ginger garlic and Chilli pastes and cook till the raw smell of ginger garlic vanishes.Add the chopped tomatoes and half of the mint & coriander leaves and saute .
4.Chilli powder-1 1/2 tsp
Turmeric powder-1/2 tsp
Biryani Masala-1 tsp (I used Shan Biryani Masala)
Add the above masalas & fry.Cook this with some water till oil separates.
5.Badam-6-7
Desiccated Coconut-1 tbsp
Grind this together to a smooth paste adding some water.Add 1/2 cup of the set aside fried onions crushed to this and add to above and cook.Now add the marinated prawns and fry for a minute.
6.Yoghurt-1/2 cup
Salt to taste
Lemon juice-1/2 lemon
Add the yoghurt in medium heat and saute for a minute.Cover and cook till the prawns are cooked through (around 3 minutes).
For Dum
Remove 2/3 of the prawns gravy to a bowl.Spread the remaining 1/3 in the kadai as the bottom layer.
Add 1/3 rd of the cooked rice and decorate with some mint & pudina leaves and fried onions & cashews.
Spread 1/3 rd of the prawns gravy over this and then the cooked rice and the fried onions,cashews and kismis and some mint & coriander leaves.Repeat with the remaining prawns gravy and rice.Sprinkle a tbsp of ghee on top.
Cover the Kadai with aluminum foil or a firm lids.Heat a Tava and place the kadai over it and cook it on low flame for 15-20 minutes or bake it in oven for 20-30 minutes.
Serve the Prawns Biryani with raita & pappad.
Note :I added some cooked broccoli florets to the prawns gravy just after the prawns was cooked through .
