Pork Pepper Roast/Fry
Recipe
1.Pork-1 kg
Chilli powder-1 tsp
Coriander Powder-1 1/2 tsp
Turmeric powder-1 tsp
Salt to taste
Vinegar-1 tbsp
Marinate the pork with all the above ingredients for 20-30 minutes and put it in a pressure cooker.
2.Onion-1 big
Ginger-1” piece
Garlic-5 big (1 pod if using Kerala ones)
Chop the onion and crush the ginger and garlic .Add to the pork & mix in.After the pork has marinated for 30 minutes Pressure cook this for a whistle.
3.Curry leaves-2 sprigs

Use the onion only if you are making Pork Pepper Roast since it should have some gravy . If you are making Pork Pepper Fry just don’t use the extra
Onion mentioned here.
Remove the stock water from the pressure cooker into a pan and heat it.Add the curry leaves and onion chopped and fry till it starts to brown.(No need to add any extra oil as the stock would have enough oil left from the cooked Pork)
4.Sliced Coconut pieces-1/4 cup
Pepper Powder-1 1/2 tbsps
Garammasala-3/4 tsp
Tomato paste-2 tsp (optional)
Add the cooked Pork into this along with the coconut slices and some water (2 tbsps).Now Add the Pepper Powder & Garammasala & tomato paste if you are using and cook till the gravy thickens.Pork Pepper Roast is ready.
For Pork Pepper Fry follow the above recipe till the second part.Then add only the curry leaves to the stocks and cook till water dries up.Now Add the Pork and the coconut slices to it along with 1 1/2 tbsps pepper powder and 3/4 tsp Garammasala and fry till nicely browned.Pork Pepper Fry is ready .
