Poha/Aval Idli (Instant Poha Idli) [yields 22-23 idlies]
1.Poha/Thin Aval-1 cup
Rice/Idli Rava-1 cup
Thick Curd-1 cup
Salt-3/4-1 tsp
Water-2 cups(around)
Powder the poha and transfer to a vessel.Add rice rava,salt and the curd and mix in.Now add 1 1/4 cup and stir in .Cover and Let it rest for 30 minutes.
Note: If you don’t have rice rava,use Upmav rava instead.
After 30 minutes,mix gently,making sure the rava has absorbed water.Add more water to get idli batter consistency .The batter should neither be watery nor too thick.
2.Eno /Baking Soda-1/2 tsp
Before adding eno to the batter,bring water to boil in an idli steamer.Grease idli mould and keep it ready.
Once the water comes to boil in the steamer,add Eno to the batter and mix vigorously .Pour this batter to idli moulds and steam for 10-15 minutes or until a knife inserted into an idli comes out clean.Poha Idli is ready to serve with some Coconut Chutney and Sambar.
