Plum Cake

Plum Cake.

1.kismis[golden & black]

pineapple preserve

tuttifrutti

dates[pitted & chopped]

ginger preserve

Alltogether 500 gms.Soak this in 1 cup wine/brandy/rum for atleast 2 weeks.I soaked it for 1 month in 1/2 cup each rum & wine.Stir this mixture sothat all fruits are evenly coated & all liquid absorbed.

2.Butter[unsalted-250 gm

Sugar granules-250 gm[pwdr this]

Beat this together till light & fluffy.

3.Caramelised sugar syrup[dark one]-1/2 cup

Add this & beat.

4.Eggs-250 gm[5 no.'s]

Add one by one to the above & beat well. If it starts to curdle, add some flour to this .

5.Maida-250 gm

Baking Pwdr-3/4 tsp

Baking Soda-1/2 tsp

Sieve together thrice & fold in batches to the above.

6.orange juice/milk-1 cup

Add this in batches along with maida.

7.Cake jeera pwdr-1/2 tsp

Cinnamon,Cardamom & Cloves-1 tsp each

Orange Rind-2 oranges

vanilla essence-1 tsp

orange essence-1/2 tsp[u can substitute this with vanilla]

Add to the batter & fold in.Now add the soaked dry fruits & nuts to this & fold in.I mixed 2 tbsp maida with some tutti frutti & nuts & folded in last. Also kept some nuts & tuttifrutti to decorate the batter after pouring in cake tins.

Preheat oven at 160 C & bake this for 45-60 minutes,until a skewer inserted in the middle of the cake comes clean.Usually this batter requires two 1 kg moulds to bake.U can half the ingredients if u need only one cake.U can use the remaining half of the soaked ingredients to bake some other time. U will get almost 2 1/4 kg. of cake with this batter.

For the Glaze

1. Apricot Jam-3-4 tbsps

Almonds -15-20

Walnuts/Pecans-10

Boil some water and add the almonds

and let this sit for 10-20 minutes. Now

you can easily Remove the brown cover of the almonds.Pat Dry and let it dry in the sunlight for a day.

Big Raisins-20

Slice the above dry fruits each into 4 slices except cherries which you can half and the raisins which you can use

as such.

Heat the jam adding 1-2 tsp water.

Method-1

Put all the above dry fruits into the Jam and coat it and arrange them on

the Plum Cakes

Method-2

Brush the Jam in the cakes and arrange the fruits neatly over the cakes and brush the Jam again over the arranged dry fruits

Glazed Plum Cakes are ready.
