Mom’s Pineapple Soufflé .
This is one of my mom’s favorite and master piece pudding which she used to make regularly.
Pineapple Soufflé 🍍 (serves 10-12 people)
1.Pineapple-1 big
Sugar-150 gm
Cut the pineapple into small pieces and cover cook till done.I had around 600 gm of pineapple pieces.Add the sugar and cook till the syrup thickens a bit.Let this cool.
Drain the pineapple pieces and set aside the pineapple juice in a bowl.
2.Gelatine-1 tbsp
Add the gelatine to the set aside pineapple juice and heat this till it’s dissolved completely.
3.Eggs-2 large/3 small
Condensed milk-3/4 tin
Milk-3/4 cup
Sugar-2 tbsps
Vanilla essence-1 tsp
Separate the white and yolks.In a medium vessel put the yolks and sugar and beat with a fork.Add in the milk and condensed milk .We have to make a custard with this using double boiler method.
Take another vessel which is bigger and can easily hold the small vessel.Pour in 2-3 cups of water and place the vessel containing the custard mixture into this and cook it,continuously stirring in one direction,until the mixture thickens .Add in the dissolved gelatine and stir in.Off the stove and remove the custard mixture and stir for a few more minutes so that it’s cooled .Add in the vanilla essence.
4.Lime juice-1 tsp
Sugar-2 tsp
Now to the egg whites bowl add the lime juice and sugar and beat it till stiff peaks form.Add this to the cooled custard mixture and fold in gently.Add half of the cooked pineapple pieces and stir in.Pour this into a glass dish and decorate with some pineapple pieces on top.Now refrigerate this for 4-5 hours or overnight .Pineapple Soufflé is ready to serve with some praline or chopped glazed cherries 🍒 or crushed peanut candy.
Note:U can double the recipe to Serve 20-25 people.For this use 1 tin condensed milk and add extra sugar to taste and double all the other ingredients as mentioned.
