Passion Fruit Cupcakes(Eggless)(yields14-15)
1.All purpose flour-150 gm
Baking powder-1/2 tsp
Baking soda-1/4 tsp
Salt-1/4 tsp
Sieve together thrice and set aside.
2.Unsalted Butter-85 gm
Granulated Sugar-60 gm
Yoghurt-70 gm
Beat the room temperature butter and sugar with a beater till creamy.Add in the yoghurt and beat again till sugar is dissolved.
3.Passion Fruit Syrup-160 ml
Milk-60 ml
I used Nellara Passion Fruit Syrup I got from the supermarket here.
Add in half of the
flour mixture and mix on low. Add in
milk and passion fruit syrup and the remaining flour mixture.
Mix on medium speed for about 1-2 minutes or until mixed through.
Add 1 tbsp more milk if needed,so that the batter falls like a ribbon consistency.
Meanwhile preheat the oven at 180 C.Grease the Bundt pan with oil.
Transfer the batter into prepared pan.Tap gently against the counter torelease air bubbles.
Bake for 11-13 mins or until a!toothpick inserted into the center comes out clean. Remove pan from the oven and let cool in pan for 10 minutes
on a wire rack. Gently remove the cakes using a knife or skewer,onto a rack and let it cool completely.Passion Fruit Cup Cakes are ready to serve.
Note::for an egg version, replace the yoghurt & milk with 2 eggs and make the cakes 🍰.
