Parippu Pradhaman/Payasam

Parippu Payasam/Pradhaman (serves 15 people)

1.Moong Dal[splitted]-200gm

Clean & soak this for 1 hr.

2.Channa dal-50gm

Pressure cook this with enough water till done[1 or2 whistles ].

3.Jaggery-750gm

Add 1 cup water & boil till it dissolves completely.sieve this.

4.sago seeds-50gm

cook this with 1/2 cup water till done.[this might take 5 minutes.]

5.coconut [cut into small bitesize pieces]-1/2 cup

cashews[broken]-50 gm

kismis-25gm

Fry this seperately in 3 tbsp ghee & set aside.

6.cardamom pwdr-1 tbsp

7.coconuts-2 big ones[scrapped & milk extracted]

Cook the soaked Dal with enough water often removing the foam coming on top.Once it starts to boil,cook the dal on medium heat,checking often sothat it doesnt overcook/become mash.When the Dal is done,add the pressure cooked chana dal & filtered jaggery water to this.When the water reduces little bit add 2cups second milk of 2 coconuts.When this reduces add the cooked sago to this-use only what u require to thicken the payasam.when this starts to boil,reduce heat & add 1cup first milk[thick milk] to this.Continue stirring,till just heated & add cardamom pwdr & fried nuts &all & off the stove.Once cooled if its too thick, u can add some boiled water to loosen it.

Note: If u don't get fresh coconut,u can use Eastern Coconut Milk which comes in tins or use Maggi/QBB coconut milk pwdr.
