Nutty Pineapple and Tutti Frutti Cakes
1.For Soaking
Pineapple wine-1/2 cup
Tutti Frutti-1 cup
Pineapple jelly/jam/preserve-3 tbsps
Mix all the above ingredients together and soak for a day or 3.
2.All purpose flour-250 gm
Baking Powder-2 tsp
Baking soda-1/2 tsp
Salt-1 tsp
Sieve together thrice and set aside.
3.Unsalted Butter-200 gm
Sugar-250 gm
Eggs-4
Milk/Pineapple juice-1/2 cup(used store bought juice)
Mixed nuts-1/2 cup chopped
Pineapple essence-2 tsp
Coat the soaked tutti-frutti and nuts with 2 tbsps of sieved flour.Powder the sugar after weighing.
Cream together room temperature Butter and sugar till light and fluffy .Add eggs one by one,beating well after each addition.Add pineapple essence and mix again.
Now add the flour & dry fruits in 2-3 batches.Fold in with a spatula.Add the milk/juice in between (after the first addition of flour).
Pour the batter into an 8" square pan lined with parchment paper.Bake in a preheated oven at 170 C for 30-40 minutes or till a skewer inserted at the center comes out clean.
