Nutty Mango Cake
One of the softest cake with the goodness of mango,cardamom and nuts.A mango lovers dream of a moist cake with the flavors of mango & nuts comes true in this nutty mango cake.
Recipe
1.All purpose flour/maida-2 cup
Baking powder-1 tsp
Baking soda-1/2 tsp
Salt-3/4 tsp
Sieve together all the above ingredients thrice and keep aside.
2.Unsalted Butter-113 gm(1/2 cup)
Granulated Sugar -1 1/4 cup
Cardamom-4
Powder the sugar along with the whole cardamom.Beat together the room temperature butter along with powdered sugar till pale & fluffy.
3.Eggs-3 large(each egg weighed 55 gm each)
Mango/Vanilla essence-1/2 tsp
Add one egg at a time and beat after each addition till blended.Add the essence & fold in.
4.Pistachio & Silvered Almonds-1/2 cup
Mango Purée-3/4 cup
Purée the mango by adding some water so that it’s of pouring consistency and not thick.If the mango isn’t sweet add 1/4 cup sugar and purée it. I used Aam Ras I got from Surat.
Now beat/fold in the flour mixture alternating with the mango purée,starting and ending with flour.Fold in half of the sliced Pistachios & Almonds along with the last batch of flour.
Pour this batter into an 8” square pan lined with parchment paper and top it with the remaining sliced pistachios and almonds.Tap the baking pan on the counter top twice to escape any air pockets inside it.
Bake this in a preheated oven at 180 C for 30-40 minutes.Mine was done in 31 minutes.This may vary from oven to oven and the pans used.Check after 25 minutes or nice aroma of cake arises,inserting a skewer in the middle of the cake.The cake is done if a skewer inserted at the center comes out clean.
