Nutty Banana Cake (with oil)
1.Mashed Banana-3/4 cup(3 small)
Milk-1/4 cup
2.All purpose flour-150 gm
Baking soda-1/2 tsp
Salt-1/4 tsp
Sieve together the above ingredients thrice and set this aside .
3.Refined oil-1/3 cup
Granulated Sugar-3/4 cup
(I used half cup white sugar & remaining brown sugar)
Powder the sugar and beat with the oil until well dissolved.
4.Egg-1
Add the egg and beat in.
5.Thick yoghurt-1/3 cup
Add the yoghurt and beat in.Now add half of the set aside flour and fold in.Add the mashed banana & milk mixture and stir in.Add the remaining flour mixture and gently fold in.
6.Sliced almonds and pistachios-1/4 cup
(U can add any nuts of your choice)
Add a tsp of flour to the almonds and pistachios sliced and mix to coat the nuts.
Now add the dusted nuts to the cake batter and just fold in.Pour this into a prepared 4” cake tray or a loaf pan and tap the tray on the counter top to release any air bubbles in the batter.
Sprinkle some sliced almonds and pistachios on top and bake in a preheated oven at 180 C for 40 minutes or until a skewer inserted at the center comes out clean.
Note:If you are baking in a bigger pan the cake will be done in 30-35 minutes.
