Nadan Duck Curry 🦆
1.Duck-11/2 kg
Chilli powder-1 tsp
Turmeric-1/4 tsp
Vinegar-1 tbsp
Salt to taste
Marinate the cleaned duck pieces with the above ingredients and pressure cook for a whistle.
2.Shallots-10
Ginger-2” piece
Garlic-5 big pieces
Crush this together and set aside.
3.Coconut oil-2 tbsps
Onions-2
Green Chillies-4-5
Curry leaves-2 sprigs
Heat oil and sauté the sliced onions,Curry leaves and green chillies.Once onions are glossy,add the crushed shallots,garlic and ginger and sauté.
4.Chilli powder-1 1/4 tbsps
Coriander powder-1 1/2 tbsps
Turmeric powder-1/2 tsp
Fennel Seeds-1 tbsp
Whole Pepper-1 tbsp
Potato-1 big
Carrot-1 big
Tomato-2
Coconut milk-2 cups
Powder the fennel and pepper and set aside.
Now add all the above masalas and sauté on low heat for a minute.Add in some water and cook till raw smell vanishes .Add in the vegetables cut into medium pieces ,salt and enough water to this and cover and cook till done.
Add in the cooked duck pieces and stocks .Add in the coconut milk .
5.Garam Masala-1 tsp
Vinegar-1 tbsp
Coriander leaves-few
When this comes to boil add in all the above ingredients and adjust salt.Nadan Duck Curry is ready to serve with some Appams or Parotta .
