Mushroom Biryani 🍄 with ,Karinellikka ,Raita and Pappadam
Mushroom Biryani
1.Mushroom -250 gm
Onions-2
Ginger Garlic paste-1 1/2 tbsps
Green chillies-10
Tomato-1
Turmeric-1/2 tsp
Garam Masala-1/2 tsp
Chilli Powder-3/4-1 tsp
Cinnamon-1 “piece
Cardamom-4-5
Cloves-5-6
Olive oil-2-3 tbsps
Whole Pepper-5-6
Star Anise-1
Bay leaf-1 big
Fennel seeds-1/2 tsp
Cumin jeera-3/4 tsp
Coconut milk-1 cup
Water-1 1/4 cup
Salt to taste
Basmati Rice-1 1/2 cup
Wash and soak the rice for 30 minutes.Drain.Heat olive oil and sauté the whole masalas till it pops.Add in the fennel and cumin seeds.Add in the mushrooms cut to big pieces and sauté for 2 minutes.
Add in the turmeric Chilli and Garam masala powder and sauté.Add in the chopped tomato and half of the coriander & mint leaves and sauté.Now add in
the rice,salt and sauté for 2-3 minutes.
Now add the coconut milk ,water and remaining leaves to this and cover cook on medium heat till all the water dries up.Off the stove and after 15 minutes fluff it with a fork.

Kismis-10-15
Slice the onions and fry till golden brown.Remove.Add in the cashews and kismis and fry till golden.
Sprinkle some fried onions,cashews and kismis over this.Mushroom Biryani is ready to serve with some raita,pickles and pappadam
