My mom's Chocolate Cake
This cake comes good whatever minor changes you make to the original version which the vanilla cake recipe I posted last year.My mother used to make the vanilla & chocolate cakes on the same day as half of her kids wanted the chocolate version including me.She doesn't make cakes for our birthdays .She usually makes them when kids are having holidays and the house is filled with cousins and kids friends who have come to play here.
This is the only time she used to make us help her in the Kitchen which usually is forbidden for us kids . In those days there was no electric beaters and we have to Cream the butter and sugar with a wooden spoon .And as kids we used to love ❤️ this as we were able to taste the batter in between creaming till it's poured to cake tins to bake -whether it is to check the sugar has completely dissolved or not,which we were very keen to check often,or to scrape the last of the batter in the bowl,which results in almost 1 cup batter going to her kids tummies than converted into cakes.
She creams the butter and sugar & adds eggs one by one and for this we wait patiently for our turns to Cream it.While doing this we would be more happy if she gets a phone call in between and every one is checking the batter and polishes a big portion to their tummies.
She usually sieve the maida and salt and divide into half for the vanilla & chocolate cakes and remove 2-3 tbsps of maida from the chocolate cake mix and replaced it with cocoa powder. I have tried this with energy drinks like Bournvita,Milo,Ovaltin etc instead of cocoa powder.
She used to make it with milk 🍼 which I have replaced with curd/ buttermilk.Have made this cake with half butter and half oil too when I couldn't get butter in any of the shops at my in law's house 🏡 . That recipe I have posted as Chocolate Cake 🎂. I have made this cake many times but forgot to post the recipe for the same.So here goes the recipe for my mom's chocolate cake.
💪 Mom's Chocolate Cake 🎂
1.Maida-1 1/4 cup
Cocoa/Ovaltine/Boost/Milo powder-3 tbsps
Baking powder-3/4 tsp
Baking soda-3/4 tsp
Salt-1/2 tsp(Omit this if using salted butter)
Sieve together thrice and set aside.
2.Unsalted Butter-113 gm/1 stick/1/2 cup
Sugar granules-1 cup
Powder the sugar and cream together with room temperature butter till light and fluffy.
3.Eggs-2
Curd/Buttermilk-1/2 cup or milk-1/2 cup
(I used buttermilk substitute which is by adding 1 tbsp white vinegar to 1/2 cup milk and let it sit for 5-10 minutes without disturbing.Instant buttermilk is ready to use)
Bru Instant coffee-1/2 tsp dissolved in 1/2tbsp lukewarm water (optional)
Vanilla essence-1 tsp
Add in the eggs one by one & cream.Add the vanilla & coffee if you are using.Fold in the flour mixture in 3 additions and the buttermilk in 2 additions starting and ending with flour.
Pour into an 8" round pan.Bake in a preheated oven at 180 C for 25-35 minutes or until a skewer inserted at the center comes out clean.Mine took exactly 31 minutes.
