Masala Dosas for Breakfast
For Dosa batter
1.Raw Rice-1/2 cup
Urad dal-1/4 cup
Fenugreek seeds-1/4 tsp
Soak the rice for 5-6 hours. In another bowl soak the urad dal & fenugreek seeds for 2 hours.
2.Cooked rice-1/4 cup
Salt to taste
Grind the urad dal and fenugreek mixture to a smooth paste adding some of the soaked water in a mixie.Remove it into a bowl.Now grind the soaked raw rice by adding water to a smooth paste .Add the cooked rice & salt and grind till u get a smooth batter.Remove and add to the above dal batter and mix.Set this aside to ferment for 6-8 hours or overnight.
The next day Remove some of the fermented batter to a bowl . If the batter is thick add enough water to make it loose.
Heat a nonstick pan or cast iron Dosa Pan and pour 2 ladles of batter to the center of the pan and spread the batter with the back of the ladle into a thin circle.
Pour half a tsp of ghee & cook this Dosa over medium heat till the sides starts to brown/comes off the pan.Place 3-4 tbsps of Potato Masala and fold the Dosas.Masala Dosa is ready to Serve with some Sambar & Coconut Chutney.
Recipe for the PotatoMasala/Bhaji
1.Boiled Potatoes-2
Carrot-1
Mash the boiled potatoes and set aside .Chop the carrot.
2.Onions-2
Ginger-a small piece
Garlic-2 (optional)
Green chilies-3-4
Curry leaves-1 sprig
Mustard seeds-1/2 tsp
Urad dal-1/2 tsp
Dry Red Chilli-2
Heat 2 tbsps of oil and splutter mustard seeds and then add the urad dal and sauté till browned.Now Add the broken dry chilly.Now Add the curry leaves and then the chopped ginger and garlic (if using) and sauté for a minute.Add the chopped onions and green chilies and sauté till onions turn glossy.
3.turmeric powder-1/2 tsp
Pepper powder-1/4 tsp(optional)
Coriander leaves-few
Lime juice-1/2 a lime
Salt to taste
Add the turmeric powder and pepper powder (use this if your green Chillies aren’t spicy) and sauté.Now Add the chopped carrot ,3 tbsps of water,salt and cover and cook on medium heat till the carrot is cooked through.Add the mashed potatoes and stir in .Adjust salt.Add the chopped coriander leaves & switch off heat.Add the juice of half a lime & stir in. The potato masala is ready
