Mango Jamuns
For the Jamuns
1.Mango-1 medium
Purée the mango and cook for 5-7 minutes on medium heat continuously stirring.Set this aside to cool.
2.Milk powder-1 cup
Maida-1/4 cup
Baking powder-1/4 tsp
Unsalted butter-3 tbsps
Mix the milk powder,maida & baking powder in a bowl. Add the butter and mix in.Add the mango pulp little by little and knead it to a smooth dough .Add a few drops of milk if required.Cover & set this aside for 15 minutes.After 15 minutes make small balls without cracks and deep fry in medium heat 10-12 balls at a time in oil/ ghee.Once fried immediately put the Jamuns in sugar syrup.
For sugar syrup
3.Water-1 cup
Sugar-1 cup
Cardamom 2-3 splitted
While making balls make the sugar syrup.
In a vessel add all the above ingredients and bring to boil.Let this simmer for 2-3 minutes.Off the stove.Your sugar syrup is ready. Add the fried Jamuns and let them soak in the hot syrup for 4-5 hours.
Once Jamuns are well soaked serve them with mango ice cream.
