Mango Cake with Mango Ganache
For the cake
1.All purpose flour-1 1/2 cup
Baking soda-1 tsp
Cardamom powder-1/2 tsp
Ginger powder-1/2 tsp
Salt-1/2 tsp
Sieve together the above ingredients thrice & set aside.
2.unsalted butter-1/2 cup (113 gms)
Sugar granules-1 cup
Eggs-2
Powder the sugar and beat together with room temperature butter till pale and fluffy.Add the eggs one by one & beat in.
3.mango purée-1 cup(if your mango isn't sweet add 1/4 cup sugar powder to the purée)
Buttermilk-1 cup
(Add 1 tbsp vinegar to 1 cup room temperature milk .stir & set aside for 5 minutes.you will get home made butter milk after 5 minutes)
Chopped walnuts-1/2 cup
Add the mango purée & 1/3 of flour mixture and fold in. Add the butter milk (as required for the batter to fall like a ribbon falling texture) and flour mixture alternately & fold in. Add the chopped walnuts and bake in a preheated oven at 170 C for 25-35 minutes or until a skewer inserted at the center comes out clean.
Mango Ganache drip
1.Mango purée-1/2 cup
White chocolate-100 ml
Whipping cream-100 ml
Mango essence-1/2 tsp
Boil the mango purée & whipping cream .I added 3 tsp sugar to it as my mango was not sweet.Pour over chocolate and stir to dissolve .Pour this over cake .
