Lobia /Black Eyed Peas (cowpeas) Masala
Black Eyed Peas-1/2 cup
Wash and soak this for an hour or two.Drain and add it to a pressure cooker along with 1 1/2 cup water and cook it for a whistle or until cooked through.
2.Mustard seeds-1/2 tsp
Cumin seeds-1/2 tsp
Curry leaves-2 sprigs
Onion-1 big
Ginger-1/2” piece
Garlic-3-4
Green chilies-2-3
Oil-1 1/2 tbsp
Heat oil and splutter the mustard and then cumin.Add in the all the above ingredients chopped and cook till lightly browned.
3.Turmeric-1/4 tsp
Chilli powder-1/2-3/4 tsp
Coriander powder-3/4-1 tsp
Tomato-1
Tomato Paste-2 tbsps
Salt-1/2-3/4 tsp
Add in all the masalas and sauté on low heat for few minutes.Add in the chopped tomatoes and 1/4 cup of the leftover water from the cooked lobia and cook until tomatoes are mushy.
Now add the cooked Lobia and remaining water to this.Add in the tomato paste and salt and cook till the mixture thickens a bit.
4.Garam Masala-1/2 tsp
Dried Pomegranate seeds-3/4-1 tsp
Coriander leaves-few
Add in the Garam Masala,dried pomegranate seeds and bring to boil.Adjust salt and add in chopped coriander leaves and off the stove .Lobia Masala is ready to serve with Chappathi or Rice.
