LemonCream Cheese Pound Cake

Lemon Cream cheese pound cake

1.All purpose flour-3 cups

Baking powder-1 tsp

Baking soda-1/4 tsp

Salt-1/2 tsp

Sieve together thrice & set aside.

2.Unsalted butter-1 1/2 cup (340 gms)

Cream cheese-220 gm(I used Philadelphia cream cheese spread full fat)

Granulated Sugar-2 1/2 cup

(If you r using a hand beater,it's better to powder the sugar and use.)

Cream together room temperature butter and cream cheese until smooth. Add the sugar in 3 batches & beat till white and fluffy.

3.eggs-6 large

lemon zest-of one lime

Vanilla essence-2 tsp

Add the eggs one by one & beat in. Add the lemon zest and vanilla and beat in.

Now gently fold in the flour mixture in 3 batches with a spatula .Do not over mix.

Pour the batter into 2 prepared loaf pans.Smooth the top.Tap the pan on countertop .Bake in a preheated oven at 160 C for 30-40 minutes or until a skewer inserted in the middle comes out clean.

I halved the recipe & made a loaf & it took exactly 35 minutes for mine .
