Lemon Cream Cheese Pound Cake
1.All purpose flour-3 cups
Baking powder-1 tsp
Baking soda-1/4 tsp
Salt-1/2 tsp
Sieve together thrice and set aside.
2.Unsalted Butter-340 gm
Cream cheese-220 gm
Granulated Sugar -2 1/2 cup (powder sugar and use)
Cream together room temperature butter and cream cheese with a beater .
Add the sugar and beat in till light and fluffy.
3.Eggs-6
Lemon zest-1 tsp
Lime juice-3-4 tbsps
Add the eggs one by one and beat in.Add the zest and juice and beat in.
Fold in the set aside flour mixture in 3 additions with a spatula.Do not over mix.
Pour the batter into two prepared 8" round pans.Smooth the top & tap the pan on counter top.Bake in preheated oven at 160 C for 35-45 minutes each or until a skewer inserted at the center comes out clean.
I baked this in a microwave with convection mode and it took exactly 41 minutes for each cake. The time varies with pans and from oven to oven.
