Lazy Daisy Cake

It's actually a hot milk sponge cake with a sweet coconut topping which gives it a great look and makes it yummy

For the cake I used my Hot Milk

Sponge Cake recipe

Hot Milk Sponge Cake

1.All purpose flour(Maida)-1 cup

Baking powder-1 tsp

Salt-1/4 tsp

Sieve together all the above ingredients thrice and set aside.

2.Milk-1/2 cup

Unsalted Butter-2 tbsps

Heat together the milk and butter till butter melts.Keep this warm.

3.Granulated Sugar-1 cup(This Cake is a Sweet one.U can reduce the sugar by taking out 2 tbsps from the mentioned 1 cup )

Eggs-2

Lime juice-2 tsp

Vanilla essence-1 tsp

Beat all the above ingredients together with a beater until light and fluffy-about triple in volume.

Add the flour mixture and stir in with a spatula.Now add the hot milk & butter mixture and stir in.Pour this into a 6” round cake pan lined with parchment paper and bake immediately in a preheated oven at 180 C for 35-40 minutes.Mine took exactly 35 minutes.

Today used 1 1/2 times of the above recipe to make it in a 9" square pan

and it was done in 27-28 minutes.

Allow the cake to cool for 10 minutes. Meanwhile make the coconut topping

4.For the topping

Unsalted Butter-5 tbsps

Sugar-1 cup

Coconut grated-2 cups

Milk-1/4 cup + 1 tbsp

In a pan put all the above ingredients and heat this till it becomes a thick mixture.


Note:U can reduce the quantity of coconut to 11/2 cups & sugar to 3/4

cup if you don't want a thick

topping.Also reduces the sugar to 1/2 cup if you are using sweetened

coconut flakes.

5.Cashews-10-12

Cut the cashews into small pieces and add to the above.


Now Spread the coconut mixture evenly on the baked cake and broil this in an Otg for 2-3 minutes until lightly browned on top.


Since I baked this in my convection mode of the microwave used my convection +grill combo to brown the top. It took around 2 1/2-3 minutes for it to brown. After 1 1/2 minutes please check whether it's browning too fast.
