Flaky Lachha Parathas
Lachha Parathas Recipe
1.Atta-1 3/4 -2 cups
Maida-1/2 cup
Ghee-1 tbsp
Salt to taste
Combine the above ingredients in a bowl & rub in ghee.
2.Lukewarm water as required
Ghee for brushing & frying
Maida/wheat flour for dusting
Make a dough adding enough Lukewarm water.Let this rest for 20-30 minutes well covered.Divide the dough into 8 even size balls.Take one ball and roll into thin Chappathi dusting with flour (make sure the sides shouldn't be thick).
Now brush some ghee on the Chappathi and sprinkle some flour over this.(as shown in photo).Now from the edges start to fold and pleat this as we fold paper fans .Gently stretch this slightly and tightly roll into discs tucking the edges under the disc.Set aside.Now repeat this with the remaining balls.
Slightly dust the countertop and rolling pin and roll each disc from the center to edges in one direction sothat the layers are not suppressed.
Heat a tava and fry the Parathas in medium heat . The tava should be hot when you place the Paratha on it.Turn the Parathas when one side is partially cooked .Apply ghee on the partially cooked side.Now turn again when the other side is partially cooked.Apply ghee and cook both sides till light brown patches appear.Lacha Parathas are ready to serve with curry of your choice.
