Kuttanadan Duck 🦆 Roast
1. Duck-1 1/2 kg
Cut into medium pieces with skin on.
2.For marination
Chilli powder-1 tsp
Corriander powder-2 tsp
Turmeric powder-1/4 tsp
Pepper powder-1/4 tsp
Salt to taste
Vinegar-1 tbsp
Mix all the above ingredients and marinate the duck for atleast 1/2 an hour .U can pressure cook this for a whistle if you want.
3.Onions-5
Ginger-1 big piece
Garlic-6-7 big( small 1 pod full)
Green Chillies-4-5 slit
Curry leaves-2 sprigs
Potatoes-2 big
Vinegar-1 tbsp
Coconut oil as required
Slice the onions.Crush the ginger & garlic .Cut the potatoes into thin slices and immerse in water for 10-15 minutes.
Deep Fry two onions sliced till golden and set aside.Remove the sliced potatoes from water and deep fry till golden.
In another pan heat some coconut oil .Add the curry leaves. Then add the remaining onions and saute.Once onions are meshy,add the crushed ginger & garlic mixture and slit green Chillies & saute till lightly browned.
4.Turmeric powder-1/2 tsp
Chilli powder-2 tsp
Corriander powder-2 tbsps
Pepper powder-1/2 tsp
Garamasala-1 tsp
Fennel powder-1/2 tsp
Add the above masalas except pepper and garamasala and saute in medium heat .Add some water and cook till oil separates.
Now add the marinated duck pieces and saute for a minute or two.(U can pressure cook the duck for a whistle if you want).
Cover and cook on low heat till the duck is cooked through.Add the vinegar,pepper powder and garamasala powder.Cook till all the water dries up.Remove any excess oil /fat floats.(Since we didn't remove the skin there will be lots of fat floating on top.)
Decorate with the set aside Fried onions and potatoes.
