Kerala Mutton Fry
1.Mutton-1 kg
Coconut slices-1/4 cup
Turmeric powder-1/4 tsp
Chilli powder-1/2 tsp
Vinegar-1 tbsp
Salt to taste
Marinate the mutton with all the above ingredients for 20 minutes and pressure cook this till done.
2. Coconut oil-1 1/2 tbsps
Fennel Seeds-1/2 tsp
Onions-2
Shallots-7-9
Ginger-1” piece
Garlic-4-5 big (Chinese ones)
Green Chillies-3-4
Curry leaves-2 sprigs
Heat oil and splutter the fennel seeds.Add the curry leaves and then the sliced onions and shallots and sauté till it starts to brown .Add the crushed ginger,garlic and green chillies and sauté.
3.Chilli powder-1 tsp
Coriander powder-1 tsp
Now move the sautéed mixture to the sides or make a well at the center and add the masalas and sauté on low heat .Mix the masala with the sautéed onion mixture and continue to cook until oil separates.Add the cooked mutton to this and continue to cook until it’s well mixed through.
4.Pepper powder-1/2 tsp
Garam Masala-1/2 tsp
Tomato Ketchup-2 tbsps
or (1 tomato puréed )
Now add all the above ingredients and sauté till the mixture dries up.Adjust salt.Cook till the mixture is nicely browned.
Kerala Mutton Fry is ready to serve.
