Kerala Chicken Curry
1.Chicken-1 kg
Turmeric powder-1/4 tsp
Chilly powder-1 tsp
Coriander powder-1/2 tsp
Vinegar-1 tsp
Salt to taste
Clean the chicken pieces and marinate it with all the above ingredients for at least 30 minutes.
2.Onion-2
Shallots-4-5
Ginger-1/2” piece
Garlic-4
Green chilies-3
Curry leaves-2 sprigs
Coconut oil-2 tbsp
Heat oil and brown half of the onions sliced.Remove and Set this aside. In the same oil add the curry leaves and sauté.Add the remaining onions and shallots sliced and sauté till translucent.Add the crushed ginger, garlic & green chilies to this and sauté .
3.Chilly powder-1/2 tsp
Coriander powder-1/2 tsp
Turmeric powder-1/4 tsp
Now add the above masalas and sauté on medium heat.Add 1/4 cup water and sauté till oil separates.
4.Tomato-1
Pepper powder -1/2 tsp
Garammasala-1/2 tsp
Coconut milk-1/2 cup
Lukewarm Water -1/4 cup
Vinegar-1-2 tsp
Salt to taste
Now add the chopped tomato and cook till it blends well.Add the marinated chicken pieces and the pepper powder and Garammasala to this and stir in.cover the pan with a lid and cook on medium heat until the chicken is cooked.
Now add the coconut milk,set aside browned onions and let this come to boil.Add water& vinegar as required.Adjust salt.Once the gravy thickens add some chopped coriander leaves and stir in.Kerala Chicken Curry is ready to Serve
