Kappa/Tapioca/Cassava Biryani

Kappa Biryani /Tapioca Biryani

1.Beef-1/2 kg(preferably with bones)

I used 350 gm boneless instead.

Chilli powder-1 tsp

Coriander Powder-1 tsp

Turmeric powder-1/2 tsp

Salt to taste

Vinegar-1 tbsp

Marinate the beef with all the above ingredients for 15-20 minutes.Pressure cook this for 2 whistles or till done.

2.Kappa/Cassava/Tapioca-1 kg

Cut the tapioca into medium pieces and cook by adding enough water (to cover them) and salt .When Kappa is done,remove and drain water completely .Set this aside.

3.Shallots-5

Green chilies-4

Garlic-3 big

Ginger-1/4” piece

Curry leaves a sprig

Coconut grated-1/2 cup

Pulse all the above ingredients in the mixie until just ground.

4.For tempering

Coconut oil-2 tbsps

Mustard seeds-2 tsp

Dry Red Chilies-2

Shallots-3

Curry leaves-2 sprigs

Heat oil and splutter the mustard seeds.Add the broken red chilies and sauté.Now add the sliced shallots and sauté till browned.Add the curry leaves and fry.Remove this fried ingredients to a bowl without removing the oil.

5.Onions-2

Shallots-3-4

Garlic-3 big

Ginger-1/2” piece

Curry leaves-1 sprig

Now add the chopped onions and shallots to the remaining oil and sauté.Once translucent add the crushed garlic & ginger and sauté.Once this starts to brown add the below masalas and sauté in medium heat.

6.Turmeric-1/2 tsp

Chilli powder-1 tsp

Coriander Powder-1/2 tsp

Pepper powder-3/4 tsp

Garammasala-1 tsp

Add some water/ stock from the cooked beef and cook till oil separates and raw smell of masala vanishes.

Now add the cooked beef and cook till the mixture thickens.Add the ground coconut mixture and the set aside cooked tapioca to this and a pinch of turmeric powder.

Cover this with a lid and cook for few minutes so that the coconut is cooked.Open the lid and stir well so that it’s evenly mixed.Kappa Biryani is ready.Decorate with the set aside fried shallots & curry leaves.
