Beef /Irachi Vada.
Irachi Vada Recipe (yields 35-40 small Vadas)
1.Toor/Masoor/Matar dal-1 cup
Channa Dal-1/2 cup
Whole red chillies-6-9
Soak the dal & chilli in water for 2-3 hours.drain water.
2.Cumin-3/4 tsp
Fennel-1/4 tsp
green chilli -6-7 (adjust according to your spice levels)
Curry leaves-2 sprigs
Coconut grated-3/4 cup
Grind the cumin,fennel,green chillies ,coconut & curry leaves and remove to a vessel.Add in the drained Dal along with the soaked red chillies and just pulse/grind in 3-5batches coarsely (this should not become a paste.some dal should remain whole)
3.onion-1 small
Or shallots-5-6
Ginger-1 “piece
Coriander leaves-1/4 cup
Chop the above and add to the ground dal.
4.asafoetida powder-1!tsp
Beef mince-1 cup(175-200 gm)
Salt -1 tsp
Coconut oil for frying
Add in the asafoetida,minced beef & salt to the ground mixture and make balls.Place the ball on the palms and press with the other hand to make Vada shape and fry in hot oil on medium heat till golden.Drain on tissues.
