Honey Almond Cake

1.Almonds-1 1/2 cup

Spread the almonds on a baking sheet & roast them for 10-12 minutes turning once after 6 minutes at 180 C on a preheated oven.

Once lightly cooled ,powder this in a mixie.the powder will be about 1 3/4 cups.

I used almonds with skin on.those who want to remove the skin & roast can do so. For removing the skin,boil some water(2-3 cups) & add the almonds to it & turn the stove off.cover this & keep it for 20 minutes.u can remove the skin easily now.

If u get store bought almond powder u can use it.u shud take 1 3/4 cups of almond meal for this recipe.

2.eggs-4

Sugar-1/4 cup

Seperate the white & yolk .beat the egg whites with sugar till foamy & not stiff.

Beat the egg yolks & add

3.Honey-1/2 cup

Vanilla Essence-1 tsp

And mix in.Add the almond powder along with the following ingredients .

4.baking soda-2 pinch

Salt-1/2 tsp

Now fold in the egg whites gently.pour the batter into a prepared tin & bake in a preheated oven at 180 C for 20 -25 minutes till a skewer inserted in the middle comes out clean.mine took only 20 minutes.U can be sure that the cake is done by the aroma/smell that fills in your kitchen .


Once cooled the middle of the cake depresses lightly.So I would say u use 2 loaf pans to bake this sothat u can reduce the depression in the middle of the cake.

5.sliced almonds-as reqd for decoration.

Honey-2 tbsp

Once the cake is baked,remove it from the oven & brush the honey over it.Decorate with sliced almonds.

I placed sliced almonds over the cake & baked it & once the cake was ready,brushed with honey.

This cake is very healthy as no butter/oil/flour is in it.U can also omit sugar if u don't want the cake to be very sweet.I added the extra sugar as my son said it's not sweety.but it won't suit for those who are allergic to nuts as almonds are the main ingredient in this cake.
