Green Masala Biryani

Green Masala Biryani (Mutton) for Lunch

Green masala Biryani Recipe

Chicken-1 1/4 kg

Or

Mutton-1 kg

Or

Beef-1/2 kg(boneless )

Marinate any of the above meat with 1/2 tsp turmeric,1 tsp chilli pwdr & salt to taste for 1/2 an hr.

If u r using mutton/ beef, pressure cook this till done.


1.onion-5(sliced)

Fry half of the onion & set aside.

Sauté the remaining onion in oil.add

2. Ginger-garlic paste-3 tbsp & green chillies-12[ground to paste]

& sauté .Add

3. Tomatoes-2(pureed) along with the marinated chicken & cover & cook till done.

Those using beef/ mutton, add the cooked beef/ mutton along with the tomatoes & cook till little water is left.

For Green masala

1. Badam/ cashews-10-13

2.coconut scraped/desicated coconut-3 tbsp

Grind to a paste .Add

3.corriander leaves-1/2 cup

Mint leaves-1/2 cup

Grind with the above

4.yoghurt-2 tbsp

5. Garam masala-1 1/2 tsp

6. Juice of one lime

Mix the above with the ground paste & add to the cooked chicken/beef/ mutton & cook till the gravy is thick.adjust salt & remove from fire.

For the rice

1.cardamom -5

Cloves-7

Cinnamon -2

Bay leaf-2

Pepper-7(whole)

Jeera-1 tsp

Splutter the above masalas in 2 tbsp oil in a pressure cooker.

2.Basmati rice-3 cups(soaked for half an hr.)

Add the rice & fry for 3-5 minutes.add 4 1/2 cups of water to this & cook till one whistle on medium heat.

3. Cashews-12

Kismis-15

Deep fry till golden.

Now in a big vessel layer a portion of rice.Add fried onions,& nuts. Layer with half of the chicken/ mutton / beef. Then another layer of rice then fried nuts & onion then-the remaining meat. Finally layer with the rice & garnish with fried nuts & onion . Serve with raita.
