Breakfast....Ghee Roast with Sambar
For Dosa batter
1.Raw Rice-1/2 cup
Urad dal-1/4 cup
Fenugreek seeds-1/4 tsp
Soak the rice for 5-6 hours. In another bowl soak the urad dal & fenugreek seeds for 2 hours.
2.Cooked rice-1/4 cup
Salt to taste
Grind the urad dal and fenugreek mixture to a smooth paste adding some of the soaked water in a mixie.Remove it into a bowl.Now grind the soaked raw rice by adding water to a smooth paste .Add the cooked rice & salt and grind till u get a smooth batter.Remove and add to the above dal batter and mix.Set this aside to ferment for 6-8 hours or overnight.
The next day Remove some of the fermented batter to a bowl . If the batter is thick add enough water to make it loose.
Heat a nonstick pan or cast iron Dosa Pan and pour 2 ladles of batter to the center of the pan and spread the batter with the back of the ladle into a thin circle.
Pour half a tsp of ghee & cook this Dosa over medium heat till the sides starts to brown/comes off the pan.Ghee Roast is ready to serve with some Chutney or Sambar.
