Fudgy Brownies (with butter & oil)

The Best Fudgy Brownies

1.Unsalted Butter-100 gm

Sunflower/Coconut oil-3 tbsps

Milk Chocolate-100 gm

Semisweet Chocolate-100 gm

Finely chop the chocolate .Put all the above ingredients into a bowl and melt it over a pot of simmering water .Set this aside to cool.

2.All purpose flour-3/4 cup +2 tbsps

Salt-1/2 tsp(avoid if you are using salted butter)

Baking powder-1/4 tsp

Sieve together all the above ingredients and keep aside.

3.Eggs-3

Light Brown Sugar-1 cup(packed)

White Sugar-1 cup

Beat together the room temperature eggs with both the sugars using an egg beater till creamy and fluffy. Do not skip this as this gives the flaky crusts to the Brownies.Add in the set aside cooled chocolate mixture to this and fold in using a spatula or whisk .

Gently fold in the set aside dry ingredients.Pour the batter into a 9” square pan lined with parchment paper and bake in a preheated oven at 180 C for 32-37 minutes or until a skewer inserted at the center comes out with some moist crumbs.

Let cool in the pan for 15 minutes over a wire rack ,then remove from the pan along with the parchment paper onto the wire rack and allow it to cool completely before cutting into squares.
