Dates Cake with Rum Sauce
1.Dates-1 cup
Prunes-1/4 cup
Raisins-1/4 cup
Baking soda-1 tsp
Boiling water-3/4-1 cup (250 ml)
Put all the chopped dry fruits into a steel bowl.Add in the baking soda and then the hot water and mix.Cover and set this aside for 15-20 minutes.
Note:U can soak the chopped dry fruits in 1/2 cup rum for 3-5 days and use instead .
2.All purpose flour-1 cup
Baking powder-1 1/2 tsp
Salt-1/4 tsp
Sieve the together and set aside.
3.Eggs-3 small/2 big
Vanilla essence
Brown sugar-1 1/4 cup (200 gm)
Jaggery-2 tbsp
Melted ghee- 1/4 cup
Refined oil-1:/4 cup
Beat the eggs and sugar powdered till almost tripled.
Add in the ghee & oil and mix in Now add in the flour in 3 batches and the dates mixture in 2 batches and fold in.Pour this into a greased cake tin and bake at 170 C for 45 -50 minutes or until a skewer inserted at the center comes our clean.Bake in cup cake moulds or muffin tins for individual desserts.
4.For Rum Sauce
Butter-100 gm
Brown Sugar-75 gm(1/2 cup)
Golden syrup-1/4 cup
Rum-1/4 cup
Cream-1 cup
Put all the above ingredients into a pan and bring to boil.Let it simmer for 10-12 minutes or until thickened.Once cooled,it thickens further.
Pour this over the cooled cake and serve.
