Dates and Nut Cake
1.Dates-300 gm(deseeded & then weighed & roughly chopped)
Boiling water-300 ml
Put the chopped dates In a steel bowl and add boiling water to this & cover with a lid and keep aside for half an hour.
2.Maida/Apf-300 gm(2 cups)
Baking powder-1 tsp
Baking soda-1 tsp
Sieve this together thrice and set aside.
3.Unsalted Butter-150 gm
Granulated Sugar -250 gm(1 1/2 cup)
Powder the sugar & cream with the room temperature butter with a beater till light and fluffy.
4.Eggs-2
Vanilla essence-2 tsp
Cinnamon-1 tsp (optional)
Milk-1/4-1/2 cup as required (hot milk)
Nuts-75 gm(I used a mixture of chopped cashews and walnuts.Add a tbsp of set aside sieved flour to the nuts & mix to coat it)
Add the eggs one at a time and beat in.Add the vanilla essence and cinnamon powder and stir in.
Now add the flour in 3 batches and the Dates & water mixture in two additions,starting & ending with flour.
If the mixture is too thick add the milk 1/4 cup at a time & fold in. I used 1/4 cup hot milk since my batter was thick.
Fold in the flour coated nuts .pour into 2 prepared tins . I used some extra nuts to decorate the top too.Bake in a preheated oven at 170 C for 35-45 minutes or until a skewer inserted at the center comes out clean . The baking time may vary from oven to oven and the pans used.
I used a bundt pan and a loaf pan to bake the cakes. The cake in the bundt pan was ready in 33 minutes.Check the cake after 28-30 minutes .
