Dalgona Cake

Dalgona Cake (Eggless Coffee Cake)

1.All purpose flour-1 cup

Baking powder-1 tsp

Baking soda -1/2 tsp

Salt-a pinch

Sieve together thrice and set aside.

2.Granulated Sugar-2/3 cup

Coffee powder-1 tbsp

Hot water-2 tbsps

Add hot water to the coffee powder and stir in to dissolve.Add in the sugar and grind this in the small jar of the mixie till creamy and smooth.Transfer this to a big bowl and whisk together till fluffy and light.

3.Refined oil-1/4 cup

Butter milk/curd-2/3 cup

(I used butter milk substitute instead by adding 1 tbsp white vinegar to 2/3 cup milk and setting aside for 15 minutes.)

Whisk in the oil gradually.Now add the flour mixture in 3 additions and the butter milk in 2 additions, starting and ending with flour.

Pour this into a greased 6” cake pan and bake in preheated oven at 170 C for 25-30 minutes or until the skewers inserted at the center comes out clean.I used a 6”square tin and my cake was done in 26 minutes.This time may vary with the pans used and the oven u are using.

This cake is mildly sweet.I poured some leftover ganache to half of the cake as half of the family wanted some frosting.U can use any butterscotch frosting or Chocolate frosting if you want.
