Crab/Njandu Curry🦀
1.Crabs-500 gm
Clean,cut the crabs and wash thoroughly and set aside
2.Green chillies-3-5 (slit)
Onion-1 big
Ginger-1 “ crushed
Garlic-4-5 big crushed
Turmeric powder-1/2 tsp
Chilli powder-1 1/2 tsp
Coriander powder-3/4 tsp
Tomato-1
Salt to taste
Coconut oil-1 1/2 tbsps
In an earthen pot heat coconut oil and sauté sliced onions,green chillies & curry leaves together.Add the crushed
garlic & ginger and sauté till lightly browned.Now add all the above masalas on medium heat and sauté.Add 1/4 cup water and cook till oil separates.Add in the chopped tomato and salt and cook till tomato blends well.
3.Coconut grated-3/4 cup
Turmeric-a pinch
Shallots-5-6
Green Chilli-3-4
Curry leaves-2 sprigs
Meanwhile grind the above ingredients adding enough water to a smooth paste.
4.Kodumpuli (Coccum)-2 small pieces
Soak this in hot water.
Now reduce the heat and add the ground coconut paste along with kodumpuli,crab pieces and 1 cup water to the mixture and mix well.Cook this for 8-10 minutes until the crab is cooked through and the gravy thickens .Set this aside.
For tempering
5.Coconut Oil-2tsp
Mustard seeds-1/2 tsp
Whole red Chillies-2
Curry leaves-2 sprigs
Shallots-2-3 sliced
Fenugreek seeds-1/2 tsp
In a small pan heat oil and splutter the mustard. Add the red Chillies and sliced shallots & fry till golden.Turn off the stove and add the curry leaves & fry. Now pour this seasoning over the curry & stir in.Crab curry is ready to serve.u
