Coconut Prawns š¦ š¤
1.Large Prawns-25 (700 gm)
(peeled and deveined with tails attached)
Pepper powder -1/2 tsp
Chilli powder-1/2 tsp
Salt-2 pinch
Fish sauce-2 tsp
Worcestershire sauce-2 tsp
Marinate the prawns with the remaining ingredients and set aside for 10 minutes.
2.First coating
Rice powder-2 tbsps
All purpose flour-2 tbsps
Salt-a pinch
Pepper powder-1/4 tsp
Combine all the above ingredients in a bowl.
Dust each prawn in this mixture and shake of excess flour .Repeat with the remaining prawns, until all of them are coated.
3.Eggs-2
Water-2 tbsps
In a bowl beat the water and eggs with a fork lightly.
4.Desiccated coconut-1/2 cup
Fresh Coconut grated-1/2 cup
Cornflour-1 tsp
Panko Bread Crumbs-3/4 cup
In a plate put all the above ingredients and mix together.Add in the leftover first coating mixture to this and stir in.
Now dip the prawn in the egg mixture and then dust with the panko coconut mixture and press gently so that the mixture is coated well on the prawn.Repeat with all the prawns.U can store this in the refrigerator for 2 hours hours ,until ready for frying .
Now heat oil in a deep pan, and fry the coconut prawns in medium heat until golden .Drain on tissues.Serve the Coconut Prawns with Thai Chilli Sauce or mayonnaise & chilli sauce dips.
